WHere is an easy interpretation of a cocktail featured on a new drinks list. Designed as a batch prepared mix which is bursting full of flavours of the Christmas time, which makes it excellent for your festive gathering. Save the extra syrup to use in morning drinks, sweets, or for another batch of the drink.
The Bikini Cocktail
Makes enough for 10 people
Ingredients for the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Premix (produces 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
Making the Cordial: Combine the listed ingredients into a pot, bring to a gentle boil, stirring to dissolve. After that, turn off the stove and let it to cool fully. Transfer to a sealable bottle, close it keeping it in the refrigerator, it can be stored for about one month.
For the Batch Mix: Mix every liquid ingredients into a big jug, leave to sit for 60 minutes, then strain best through cheesecloth, making it perfectly clear.
When ready to serve: Add 85ml of the batch mix into a mixing glass packed with ice, and stir carefully for a minute until cold. Strain into a chilled martini glass or equivalent, decorate with the cranberries and complete it by giving it a quick spritz of mandarin oil over the top.
